Launched a critically acclaimed pop-up restaurant in the heart of Shoreditch, bringing the bold, soulful flavours of the American South to London’s vibrant dining scene. The concept celebrated Southern comfort food with a modern twist (think buttermilk fried chicken, gumbo, shrimp po'boys, and bourbon-laced desserts) all served in a lively, music-driven environment. Originally intended as a short-term concept, overwhelming public demand extended the project to a 10-month run, earning rave reviews from press, food critics, and guests alike. The pop-up became a cult culinary destination, demonstrating strong proof of concept and I have been able to incorporate many learnings into my ongoing NOLA projects.
